Champagne Pommery held its first champagne dinner for the year at one of the most renowned restaurants in Metro Manila, Gallery By Chele.
All the attendees relished a carefully curated five-course dégustation by Chef Chele Gonzalez paired with four delectable Champagne Pommery cuvées, including the illustrious 2004 Cuvée Louise.
The evening kicked off with decadent bites paired with Berry Bros. & Rudd's Crémant de Limoux. Proceeded by the first course, scallops in cashew milk accompanied by the classic Champagne Pommery Brut Royal. For the second course, the 2006 Grand Royal added volume and complexity to the tiger prawns. The zip and refreshing Brut Royal Rosé paired beautifully with the aged tuna belly for the third course. On the fourth and most anticipated course, a cochinillo roasted to perfection in five eccentric spices is partnered with the 2004 Cuvée Louise, definitely a harmonious combination. Lastly, a sweet and delicate ube torrija to cap the night.
